Honey Anise Cookies

Ingredients
½ Teaspoon anise oil
2 Teaspoons baking soda
5 Cups flour
¼ Teaspoon salt
1 Cup honey
1 Cup sugar
1 Cup shortening
3 Eggs
Instructions

Heat sugar, shortening & honey until shortening has melted. Beat in eggs and flavoring. In separate bowl combine flour, soda and salt. Add to the honey mixture; mix until combined.

Chill about 2 hours. Drop dough in rounded teaspoons on a greased baking sheet. Flatten top of cookie.

Bake in preheated 350° F oven for 10-12 minutes. Cool on wire rack. When cool, frost with lemon frosting and decorate with slivered almonds if desired.

LEMON FROSTING:
2 Tablespoons butter, softened
1 Tablespoon lemon juice
1 Tablespoon grated lemon rind
2½ Cups powdered sugar

Thin milk/cream to make a frosting of spreading consistency.
